Recently I’ve been inspired by the Autumn season to come up with some delicious and figure friendly Fall dishes. Today I made meatloaf, I added some flavors of the Fall season by adding cranberries to the meatloaf mix and as a glaze on the top.I filled my meatloaf with stuffing for a richer and more flavorful taste.
As you can see, I made these in “mini” form which is great for portion control! One mini meatloaf is hearty and satisfying. Sometimes people go overboard with the stuffing and don’t realize that the calories and carbs add up–quickly–which is why I filled each meatloaf with it’s own portion of stuffing!
The great thing about this dish is that you can prepare your meatloaf mix a variety of different ways–you can use ground chicken, ground turkey or lean ground beef.
For a healthy side dish, I added a baked sweet potato and broccoli.
