Roasted Chicken & Pears
Yet again, I bring you another blog post featuring pears. It’s one of my favorite ingredients to use to use in my cooking during the autumn season.
Some people may not be used to incorporating fruit in their salads and dinner entrees but I love it! Chicken is an ingredient that can get boring–really quick and adding pears makes it interesting and Fall appropriate!
Today’s dinner is not only simple in preparation, it’s fresh, flavorful and figure friendly!!
Formal recipe coming soon but I wanted to share this delicious meal with you sooner.
The main ingredients needed to prepare this dish are chicken breast, extra virgin olive oil, apple cider, onions, spinach, pears & blue cheese.
Saute the onions and spinach for a few minutes and remove from pan.
Prepare your chicken breast accordingly–I like to spice mine up with a simple blend of salt and pepper. Roast chicken breast, to keep mine moist, I added chicken broth.
Once the chicken is cooked, remove Using a light drizzle of olive oil and cider, gently saute and warm the pears though.
Arrange your plate accordingly and top the warm pears with blue cheese crumbles–yum yum! I like to serve mine with a side of wild grain rice.
