Last week I tried my hand at making a figure friendly chicken pot pie–this was my first time making the dish. A lot of times I encourage people to keep it to individual servings because it makes it easier for portion control but today I opted to keep it “family style” since I did not have individual pot pie serving dishes. This particular recipe serves 4 and each serving is really hearty & satisfying.
Even though I am blogging about this dish, I am planning on doing a video on this dish for my Youtube channel because it truly was EASY to make and my husband loved it. Seriously, this meal is perfect for cold evenings. This recipe will also be featured in my new cookbook
The Delicious Details:
Start by taking 1-2 pieces of chicken breast, I used a combo of salt, pepper and parsley to season mine. After cooking, I let the chicken cool then I shredded the chicken up by hand.
For a more authentic and home-style taste, I opted to add the chicken and a can of cream of chicken soup (reduced fat, of course) to my crock pot. This will make the chicken super tender and bring out the flavors. I also added chicken stock for added flavor as well.
I added three cups of frozen veggies. I used two cups of peas & carrots & one cup of “country style” veggies, a blend of green beans, carrots, and corn. I skipped out on potatoes and instead added the extra veggies–these carbs are better than starchy white potatoes. I set the crock pot on low for 10 hours and let everything simmer for about 2 hours. Before transferring to a non stick casserole dish, I decided to make the mixture even more creamy and rich by added 1/2 cup of reduced cheddar cheese–yum!!
Transfer to your casserole dish and prep your dough by taking a few reduced fat crescent rolls or pizza roll dough–usually about 1/2-3/4 cup rolled up. Taking some flour–sprinkle on your rolling pin and roll the dough out as thin as you can. Add to over for 375 degrees until brown.
I stabbed the dough prior to baking with a fork so the crust would cook properly. It may not look super neat but my goodness, it was so delish!!
This serves four generous servings and comes in at about 6.5 grams of fat.
