Slow cooked meatballs are the ultimate comfort food for me. Here is my figure friendly recipe for slow cooked meatballs with a cheesy surprise!
You will need:
-1.3 oz fat free ground turkey meat
-1/2 cup Italian bread crumbs, whole wheat if possible
-1/4 cup egg beaters
-1/2 tbsp oregano
-2 tbsp Parmesan cheese
-2 tsp of minced garlic
-1 1/2 Lite Mozzerella stick, cut into 20 equal discs
-Fat free cooking spray
-1 14.5 oz can of petite diced tomato
-48 oz traditional pasta sauce
-1/4 cup water to “steam” meatballs *optional*
-large crock pot
Combine turkey, breadcrumbs, eggs, parm cheese, oregano and garlic, mix well. Take 1.5 tbsp of meat & form into semi-meatball shape and set aside.
Stick one cheese disc into meatball, form into meatball, making sure cheese is covered.
You should have 20 meatballs
Add to pan and brown on each side. Once browned, I like to add a little water to my meatballs to “steam” them.
Add sauce and tomatoes to crock pot, combine & mix well.
The meatballs do not have to be fully cooked at this point. Once fully browned and steamed (optional), add them to a large crock pot at medium/six hours.
I like to cook them in the crock pot for about an hour and a half/ two hours. Having the temp set at 6 hours helps them to slow cook, becoming more tender and juicy. Also, they will be WAY more flavorful.
