This recipe is very similar to my “Triple Berry Salad” and while I still enjoy that salad, adding the peaches as well as a different lettuce gives the salad a whole new and fresh flavor! This salad is super healthy and chock full of vitamin C and well as antioxidants. Feel free to add chicken–not only will it make a great dinner entree, it will add tons of protein.
–What you will need
-Spring Mix Salad Mix
-1/2 of one Peach
-2 or 3 medium Strawberries
-1/4 cup Blueberries
-*1 tablespoon Crunchy Salad Topper
-1 or 2 tablespoons Light Raspberry Vinaigrette Dressing
-I don’t “proper” measurements for super healthy foods like lettuce, usually a hearty handful or two will be good enough. Add Spring Mix to plate. Cut peach and strawberries into slices and add to salad. Sprinkle blueberries and *salad topper. Add dressing and enjoy! Serves 1
*For those not familiar with what “salad topper” is, it’s a crunchy topping that consists of sunflower seeds, soybeans, onion and carrots. It adds crunch and texture and enhances the flavor salad. You can usually find it with the salad dressings at the grocery store. It makes a great alternative to croutons.
