These are a spin on crab cakes but made with Tuna. Overall I thought they were delicious but truthfully, I thought they were even better the next day! You can get creative with this recipe and add in ingredients that suit your taste buds–I added a variety of peppers but you can add onions or whatever you’d like!
This recipe is modified from a version I found in a magazine. The original recipe serves four but I had two tuna cakes. Great thing is, for two cakes, it’s only about 200 calories and 1 gram of fat!
What you’ll need:
1/4 cup whole wheat bread crumb
1/2 cup egg beaters or 2 egg whites
3/4 cup peppers, diced (optional)
*Feel free to add onions or whatever you like! I chose red, yellow and orange peppers*
1/4 tsp Old Bay seasoning
2 5 oz. cans of Albacore Tuna, packed in water, drained
Cocktail Sauce (optional)
Combine bread crumbs, eggs, peppers, tuna, Old Bay and mix well.
Form tuna into 4 equal patties, add to pan on medium heat until both sides are cooked evenly/ golden brown.
I added 1/2 tbsp of cocktail sauce to each tuna cake. Adding cocktail sauce is optional but I thought it was a nice compliment to the peppers in the tuna cake. Enjoy!
