Mother’s Day Brunch Recipe: Chocolate & Strawberry French Toast

My greatest accomplishment in my life has been and will always my beautiful daughter. She inspires me everyday and I feel so blessed that this sweet baby girl is mine. Being Audrey’s mom is a privileged and honor.

This is the dish I eat every Mother’s Day for Brunch. It’s a fabulous tradition we started 5 years ago. This is definitely a sentimental dish for me.

Over the past 6 years, it’s been our tradition to have “Pizza Friday’s” and as you can imagine it takes lots of variety and creativity to keep it fresh. To avoid it becoming monotonous, I try to have a different style of pizza weekly–I’ve come up with SO many healthy pizza recipes along the way! This is just one of them–enjoy!

Market Pantry Strawberry Balsamic Vinaigrette (Salad Dressing)

Today I wanted to do a mini review on a new salad dressing I recently tried out. Since I love having salads as entrees and side dishes, it’s important to always keep dishes fresh and figure friendly. This new dressing is by Market Pantry, the house brand that Target carries.

With it being Springtime, my taste buds are gravitating toward incorporating fruit into salad recipes. It’s a unique taste that NEVER disappoints! This was my first time trying Strawberry Balsamic salad dressing. I love Balsamic dressings and even as a marinade on meats but never actually tried it with fruit (though I hear Balsamic Vinegar and strawberries are good). Naturally I was hesitant but I do love trying new foods.

At only 50 calories and 2.5 grams of fat per serving, I was pretty excited to try it out. Of course I added berries to my salad and I used organic Spring Mix; also I added some tomatoes for added color.

I found the dressing to be a delicious combo of sweet and savory. One flavor didn’t overpower the other–it was just a really lovely balance of flavors. I found that when making a medium salad, I didn’t have to use a full serving of dressing since this dressing coated the leafs nicely.

I recommend this salad dressing if you’re looking to try a new salad recipe–especially if you enjoy fruit and salad together. I definitely see this dressing pairing well with a chicken & other fruits in future salads!

Hello Again!

I realize that it’s been a while since I’ve done any post on my foodie site. Truthfully I’ve neglected the site for so long due to the fact that bots kept trying to attack this site. After almost a year, the issue has finally been taken care of and I’m going to work on posting my foodie related videos & post on this site.


 

Earlier this week I posted a video (on my YouTube channel ) on a classic favorite–grilled cheese. Cheese can be difficult to work into your daily diet once you’ve made a life change but there are always ways to keep it interesting and delish! The inspiration from this sandwich came from a recipe I came across many years ago in one of my mom’s diabetic cookbooks. I adapted the recipe to fit my taste buds of course.

 

Overall I would say that this grilled cheese sandwich tastes tangy and very garden fresh. The best part is is that you can be totally creative by adding any veggie of your choice!

Almond Joy Inspired Iced Mocha Latte

This is my take on the fancy coffee house inspired drink–it’s very season appropiate and a nice way to indulge without adding added fat & calories!

Figure Friendly Facts:
-Always be sure to opt for a low sugar or sugar free syrup
-Always opt for low fat or skim milk
-Add a fancy garnish for that added coffee house experience: Today I added a garnish of mini dark chocolate chips and a sprinkle of coconut flakes. In my eBooks, I talk about having an authentic experience–especially when it comes to tasty treats. Just because you have opted for healthier options, does not mean you can’t have whipped cream, chocolate and coconut! Just be conscious of how much you’re putting on and it’ll still be figure friendly!
-Add a pasty: …especially if you love that authentic coffee house experience. If you are like me, there is nothing better than enjoying a sweet with your mocha latte! I adore baking figure friendly sweet treats and it keeps me on track! I can have my cake & eat it too! :)

Easy Iced Coffee

In the Summer, there’s nothing I love more than sitting poolside with my little girl and drinking an iced coffee! Here is my take on iced coffee though there are SO many options and endless possibilities to this recipe!  You can find this coffee at Target.

Tasty options to add to your iced coffee:
  • Sugar Free Syrup (I love adding a combo of vanilla & caramel)
  • Your favorite sweetener
  • Low fat coffee creamer (I find that it gives you a richer flavor without the added fat!)
  • Your favorite milk
  • …or au natural!
All these options are going to keep it light and super figure friendly!

Figure Friendly Recipe: Chilled Italian Pasta Salad

Let’s face it,pasta salad does not have a good reputation in regards to being figure friendly. Pasta salad can be dangerous when it comes to carbs, as well as fat when you start adding in a bunch of salad dressing.  But yet again, your figure friendly foodie has come up with a recipe that allows you to still enjoy pasta, the healthy  way.
