Over the past 6 years, it’s been our tradition to have “Pizza Friday’s” and as you can imagine it takes lots of variety and creativity to keep it fresh. To avoid it becoming monotonous, I try to have a different style of pizza weekly–I’ve come up with SO many healthy pizza recipes along the way! This is just one of them–enjoy!

Market Pantry Strawberry Balsamic Vinaigrette (Salad Dressing)

Today I wanted to do a mini review on a new salad dressing I recently tried out. Since I love having salads as entrees and side dishes, it’s important to always keep dishes fresh and figure friendly. This new dressing is by Market Pantry, the house brand that Target carries.

With it being Springtime, my taste buds are gravitating toward incorporating fruit into salad recipes. It’s a unique taste that NEVER disappoints! This was my first time trying Strawberry Balsamic salad dressing. I love Balsamic dressings and even as a marinade on meats but never actually tried it with fruit (though I hear Balsamic Vinegar and strawberries are good). Naturally I was hesitant but I do love trying new foods.

At only 50 calories and 2.5 grams of fat per serving, I was pretty excited to try it out. Of course I added berries to my salad and I used organic Spring Mix; also I added some tomatoes for added color.

I found the dressing to be a delicious combo of sweet and savory. One flavor didn’t overpower the other–it was just a really lovely balance of flavors. I found that when making a medium salad, I didn’t have to use a full serving of dressing since this dressing coated the leafs nicely.

I recommend this salad dressing if you’re looking to try a new salad recipe–especially if you enjoy fruit and salad together. I definitely see this dressing pairing well with a chicken & other fruits in future salads!

Figure Friendly Recipe: Chilled Italian Pasta Salad

Let’s face it,pasta salad does not have a good reputation in regards to being figure friendly. Pasta salad can be dangerous when it comes to carbs, as well as fat when you start adding in a bunch of salad dressing.  But yet again, your figure friendly foodie has come up with a recipe that allows you to still enjoy pasta, the healthy  way.

This recipe comes in with the following stats per serving:  300 calories, 1g of fat, and 44g of carbs.  Your standard pasta salad can have as much as 130g carbs or more! I hope you give this recipe a try!

Figure Friendly Recipe: Margarita Chicken Tenderloins

While working on a DIY Summer Beauty video, I totally got inspired by the main ingredient, margarita. I decided to make a fabulous marinade for my chicken before I barbecued it later than evening. I have to tell you, this is the best chicken recipe I’ve made in a long time. Grilled barbecued chicken is amazing but adding my special marinade took it to a whole new level.

What’s on my Plate? Smoked Chicken Blue Cheese Salad (& Dessert!)

Most people will tell you that creamy dressings are 100% hands off when you’re trying to eat healthy however, if enjoyed in moderation and correct portions–you can have your chunky blue cheese dressing & eat it too! *lol*

This tasty salad comes in at about 300 Calories & 3.8 grams of fat!

Eating Fresh: Spring Meals

My daily diet habits reflect the season – -if it’s hot out, I eat light. If it’s bitterly cold out, I tend to eat comfort foods. The weather has been slightly warmer lately and it very reminiscent of Spring which gets my taste buds in the mood for lighter food and more vibrant colors on my plate. Figure Friendly Recipe: Shephard’s Pie

Who doesn’t love comfort food on a cold Winter’s day? There is nothing better then coming home to a steaming hot meal of meat & potatoes (at least in my opinion).  Yesterday I made Shepard’s Pie–completely home made, everything from scratch. If you’re unfamiliar with what Shepard’s Pie is, it’s a meat pie with a crust of mashed potato. I believe it’s usually made with Lamb however…I refuse to eat anything I think is cute. My version is low in calories and fat. Virtually no fat, low in carbs!

Literally you can eat your meat & potaoes and stay slim too!!
